Who is Ilona Carmen Beaty and why do I consider her a Goddess Among Us? Carmen, as she likes to be called, is woman of courage, strength, pride, honor and dignity. She came to this country from Germany with her husband and found him to be less than honorable once here.

Back in the late 1970's, it was just being considered wrong to abuse your wife and children, however the legal system still did not feel comfortable interring with "family problems." Carmen, wanting a better life for herself and her 4 children, found the courage and the strength to leave her husband and start a new life. Being a German citizen had its drawbacks when it came time to finding a job, however. Carmen never stopped believing that things would work out.

My mom is an incredible woman and no matter how hard I tried to find the words to describe this wonderful woman to all of you, I just couldn't.

She is the woman we should all look up to in our darkest hours. The ray of sunshine when life seems to be nothing more than thunderstorms.

Favorite Drink: White Russian
1 1/4 oz. Vodka
1 oz. Kahlua
Splash of Cream

Shake and Serve over ice in a Highball glass

Favorite Food: Cream of Wheat Dumpling Soup
3/4 cup milk
1/4 tsp. salt
1/4 cup Cream of Wheat Cereal (1-minute, 2-1/2 minute or 10-minute cook time), uncooked
1 egg, beaten
1 Tbsp. Margarine or butter
1/2 tsp. parsley flakes


Mix milk and salt in medium saucepan. Bring to boil on medium-high heat. Gradually add cereal, stirring constantly until well blended. Reduce heat to medium; cook until thickened, stirring constantly. Remove from heat.

Add egg, margarine and parsley; mix well.

Drop 10 spoonfuls of dough into large pot of simmering soup or stew; cover. Cook 8 to 10 minutes or until dumplings have doubled in size and are cooked through.
